Date Night…Dinner at Home

To say things have been a little hectic lately would be an understatement.

I wanted to do something nice for The Boyfriend so I planned a nice evening in.

I made a spinach/artichoke puff pastry appetizer followed by New Orleans style BBQ shrimp (apparently does not involve actual BBQ sauce but an hour long creole sauce from scratch- should have invested more time in google before agreeing to make this) and jalapeño cheese grits.

 But most importantly…I slaved hours over dessert.


Foodies…Fried Chicken & Biscuits

I have a couple resolutions to maintain but wanted to start the New Year off right.  So I made The Boyfriend fried chicken and biscuits from scratch.

I at least tried a slightly healthier version.  I have an old school recipe for fried chicken, in which coat the chicken in seasoned mayonnaise, bread it then fry it in Crisco.

It’s hard to make something that sounds like it’s going to kill you healthier but I used skinless tenders, replaced mayo with a mustard/chili mix and fried in olive oil.

To accompany my healthy fried chicken, I made free formed cheddar and dill biscuits.  I met a super talented personal chef/caterer, Callie Salls of Linguine & Dirty Martinis, at a party recently and bought some of this Strawberry & Black Pepper jam which was perfect to top the savory biscuits.


But we are back on track for a healthy New Years so it was a rude awakening this morning when The Boyfriend was given Special K and Light Silk.

Foodies..Fried Green Tomatoes

I’ve noticed I have made it my weekend routine to go to our local farmer’s market.  I just adore it.

This weekend The Boyfriend and I were out running errands so we stopped by and I bought these huge heirloom tomatoes.  I haven’t ever made fried green tomatoes before but decided it couldn’t be much different than frying anything else.   Turns out I was right.

It was really simple; I just coated the tomato slices in a doctored fish fry (I add spicy salt mix- makes everything better) and I fried them in chili oil.

While I have been frequenting the farmer’s market, I have not been to the grocery store lately.  So options were a little sparse but I whipped up a little Sriracha Chili Aioli (mayonnaise, Sriracha and a little bit of garlic salt) to serve on the side and it was the perfect addition.

The Boyfriend is sick…

And I feel like I have been traveling non-stop lately so I wanted to make him a nice home cooked meal.  I started with Pesto & Brie Crostini and made Vegetable Provençal for dinner.

My absolute fave cook books are by Barefoot Contessa and this was a super simple (yet extremely time consuming) recipe from her Paris book.   I love her recipe for pistou but was feeling a little lazy so subbed pesto.

Vegetable Provençal Soup with Pesto

Chop onions and saute til translucent.  Add chopped potatoes, leeks and carrots and cook 5 minutes

Add vegetable broth, salt & pepper; simmer 30 minutes

Add pesto and haricot verts and simmer another 15 minutes.

Serve with some pesto on top and shaved parmesan.  Voila!

One night he is going to have to make me dinner…

Unfortunately The Boyfriend wasn’t with me since this is my favorite place to go with him but it’s fabulous regardless of who you are with.

The restaurant has this gorgeous chrome and glass wine tower two stories high that they use something like mountain climbing equipment to scale to the top.  It’s crazy.

And the food is amazing…


Panzanella & Salmon

I became a vegetarian when I was in 8th grade, for god knows why (I just got a GREAT pair of Cynthia Steffe ultra mini leather shorts for Fall so apparently not due to my concern for animal rights), and in the last month have decided to go vegan… minus the occassional queso from my fave mexi-place across the street.

I am an absolute health zealot and so is The Boyfriend (somewhat-ish) by association.  I love Panzanella, which is just a grilled bread salad; it seemed like the perfect Summer dinner.
